-sad that I don't get to go to church because Hannah is sick
-grateful for family

Kiss the Bride

This is one of my all time favorite pictures. I looked at this picture with my hubby the other day and I said, "I didn't even know you!!" Todd and I just celebrated our 9th anniversary (March 6th) and we have been through the ringer and back together. And when I say ringer... I mean THE RINGER!! Instead of our hardships separating us, we chose to let them bring us closer together. That was hard work. And, after a near fatal illness, a couple of lost jobs, a church plant that dissolved.. there is no other man that I would rather spend the rest of my life with. I believed that on my wedding day, and I still believe that today.

"Delight yourself in the Lord and He will give you the desires of your heart." Psalms 37:4. That was the verse on our wedding invitation and I still claim that for us this day.

What's cooking??

I am no gourmet cook... but I do love to cook for people. Especially when they are not expecting it. I have been promising my mother beef stew for a few months and because it was chilly today, I decided to make it.
I will be adding new recipes every week, so if you can't enjoy it with your mouth... you can at least enjoy it with your eyes.
Except for this first picture. :)

Brown 2 lbs of beef stew meat, after coating with
flour, salt, and pepper. Yeah... it looks gross, but
get over it. :)

While the meat is browning, chop 3 carrots, 3
stalks of celery, 2 cloves of garlic, and 1 medium
onion. I have left ours whole because Mom likes
it that way.

Next chop 6-8 cleaned and scrubbed potatoes.
I left the skins on. Why, you might ask... because
it is the best part of the potato and it saves time. Oh,
and leave the potatoes quite big... you don't want
them to fall apart, and they will if they are too
small!!

When the meat is browned, transfer to a bowl,
and put the veggies in the pot. All those brown bits
on the bottom... leave it!! That is flavor baby!

Make sure to use your children as
slaves to avoid doing all the work.

Return meat to pot. Add potatoes and
enough chicken stock to cover. Bring to
a boil and then cover and simmer for
1 1/2 - 2 hours until meat is tender.

Don't forget to add a bay leaf.

Serve with bread of your choice...whole wheat
with butter for us, and enjoy.

My mom walked in the door after a long day at rehab with my dad
(He goes to physical therapy for his stroke) and asked.... what's cooking??
I am confident that this stew will delight your mother,
fill your children's bellies with a healthy dinner, and make your
husband love you all the more. It is meat and potatoes, after all.
Well.... just to let you all know. Todd has applied for positions everywhere!! He was really excited about a possible West Hills high school Campus supervisor position, but that went to a retired cop. They want to hire him in August, but we don't know if we can wait that long without a salary. I told him that nobody can beat a retired cop!! :) He has applied with UPS, the Grossmont Union school district, retail stores.. and more.
My point.... pray for us as we try to figure out what God would have us do. He could get a job at a church in a heartbeat, but we feel like we need to take a break from church work.

Anybody know of any jobs out there?? Anybody??

I am in love....

I took some photos of the cutest little boys ever at the park the other day. :) Who can resist a sweet sleeping bubba? Not me... this is Riley and he is precious! His older brother Cameron always has a hug and a smile ready for me... and he hardly knows me. Steve and Lauren... I am hooked!!

Thank God It's Friday?? I am not so sure.

What did we do today... we went to the recycle center with 6 bags of cans. The children got 7 dollars each for all of their earth saving, super-hero recycling! We ran to the Santee library to get a new card, check out some books, and pay a 10 year old .75 cent fine!! Good thing they don't charge interest. Then my mil took us to a fine dining establishment called Mc Donald's... you might have heard of it, where my daughter peed on the slide. Yep... we ran away really fast while my mil told an employee. We didn't want to see the dirty looks the other mother's were sure to give while they shut down the play place for cleaning!!

In other news, Todd is working on my website, so that should be up soon. He is amazing... creating a beautiful site out of nothing. :) I am off to read a good book, hopefully.....

My little sis... Amy

I had the opportunity to take this picture for my sister during Christmas vacay in California. I didn't think I would be back so soon.... but then my husband lost his job, and we headed back down, where the sun is hot, and it doesn't rain!! Hallelujah. Isn't she lovely.... isn't she wonderful??
